Sunday Supper

I'll be gone for 10 days so I thought I'd better cook up something really special for Don tonight.  Herb roasted chicken should do just the trick!

This delicious recipe for herbs de Provence roast chicken from Design Sponge is fabulous!

herbs de Provence roast chicken

Here's what you'll need

14lb roasting chicken
4 tablespoons butter
3 tablespoons herbs de Provence
Fresh herbs (thyme, rosemary, lavender)

fingerling potatoes


Preheat the oven to 400°. Clean the chicken inside and out with cold water. Pat dry and place in a heavy bottomed roasting pan along with any veggies along the sides.

Rub the entire chicken with butter.

Tie the drumsticks together with kitchen twine.

Season the chicken by sprinkling it with herbs de Provence and salt.

Place a few springs of the fresh herbs inside of the chicken.

Cook the chicken for 1 hour and 15 minutes, or until cooked. Baste the chicken periodically while cooking.

Before carving the chicken, let it stand for five minutes.
