It's hard to believe that Summer is really over. Unfortunately in Arkansas, the temperatures are still on the warm side so I think we will just ease into the new season slowly. Still not ready to start preparing anything too heavy for dinner, so for Sunday Supper I think we'll try this recipe for Chicken Lemon Skewers from Aged and Gilded.
Chicken Lemon Skewers
Here's what you'll need:
1 lb. skinless, boneless chicken breast
1 cup of plain yogurt
2 tbsp extra virgin olive oil
2 garlic cloves, crushed
grated zest and juice of 1 unwaxed lemon
1-2 tsp ground chile
1 tbsp chopped fresh cilantro
sea salt and freshly ground pepper
12 bamboo skewers soaked in cold water for 30 minutes
Chicken Lemon Skewers recipe:
Begin by cutting the chicken lengthwise into 1/8 inch strips. Place the strips into a shallow ceramic bowl.
In a separate bowl, place all of the ingredients for the marinade and stir well.
Pour the mixed marinade over the strips of chicken breasts. Turn the chicken strips to ensure that all sides of the strips are covered with the marinade.
Allow the strips to marinate overnight in the refrigerator.
After marinating, place the chicken strips on the bamboo skewers.
On an outdoor grill or broiler, cook the strips for 3 to 4 minutes on both sides until tender.
And there you have it! A delicious Sunday meal in no time!
