Sunday Supper...Turkey Bean Chili

Need I say more?  We're a little crazy around our house.  The tree  and garlands are all down and the ornaments packed away until next year. Don't get me wrong.  I love, love the holidays.  We get ready for them earlier than most and when they are over, well they are just over.  We can't relax until everything is down and cleaned up.  I told you, we're a little crazy around here.  But I have to tell you even the dog's happy right now!

We've got that  good kind of exhausted feeling going.  You know the one you get when when you've just finished a huge job???  A big bowl of Turkey Bean Chili sounds great!

Cook Run Beer.

He loves to cook, is training for a Marathon and is totally into beer.    The chili is one of his newest recipes.

Yields 6/1.5 cup servings


1 pound 99% fat free ground turkey

2 cans canellini beans(drained and rinsed)

2 yellow onions(small diced)

1 1/2 cups sliced button mushrooms

4 cups unsalted chicken stock

2 tbsp turmeric

2 tsp garlic powder

2 tsp onion powder

1 tsp ground red chili

2 tsp chili powder

2 tbsp ground cumin

salt to taste


Heat olive oil in a deep pot, add the onions and saute until they turn translucent and smell sweet. Add the turkey, mushrooms, and beans. Cook for about 2 min then add the chicken stock and all the spices. Cook for 1 hour to reduce the liquid about 1/3

Season with salt to your preference.

Topping: Mix 1/2 chopped avocado and 2 tbsp fat free sour cream to create a chunky avocado sour cream. I also topped the chili with 1/4 cup 2% cheese. Nutrition facts do not include toppings.

And now it's time to get back to that fire.  So many wonderful memories made this year.  The tree and the gift wrap may all be gone but the memories made will live on forever.  A favorite was spending time with family and our precious Reece who is 14 months old.  His blue eyes filled with wonder captivated us all.
