Sunday Supper...The Best Turkey Ever...And On to Christmas!

It's been a fact November 16th was our last post.  Makes us sad...because we miss sharing with you...But are counting our blessings because our business is just so good!

So here is a very late...Happy Thanksgiving!

We hope that your's was as special as ours...spent with family and friends!!!

We ate until we just couldn't eat anymore...

The boys really loved their pie...

We've already cooked your turkey...but this is as much for us to save for next year as you...and believe want to save this recipe.  (Would also be good for clean eating ...if you are ready to start that).

We just eat white it's bone in turkey breasts that we cook.

Did a dry brine for two days before I baked the turkey...Kosher salt, black pepper, chopped fresh rosemary and thyme...Rub all over turkey as well as under the skin...

Just before you put the turkey in the oven...slather softened butter with orange zest all over...and a bit under the skin too...

Rough chop carrots, celery and onion and place under the bird...or birds with an inch or two of broth...

Bake for 2.5 hours plus...depending on the size of your bird...

I have to tell you that this was the most flavorful, moist turkey that I have ever cooked.  I tweak the recipe every year based on different recipes that I find...but this is the keeper...Will never bake my turkey any other way...

And was so good...probably won't wait till next Thanksgiving to do this again!

Pin this recipe so you will have it for next year.

It's on to Christmas now...I have to decorate it's an easy transition...

Lot's of projects we've just finished up that we hope to share in the coming weeks...

But for tonight...we just want to express our thankfulness for each and every one of you who follow and shop with us.

We are forever grateful!

It's your turn.  Let's talk!

Sunday Supper... Leftover Turkey Tettrazini

Happy Thanksgiving weekend...

We hope you have had a great one...We love nothing better than getting together as a family and had another great time on Thursday...

(Obviously haven't figured out yet, why my pictures are uploading from my i-phone to my computer as half an image...How many ways can I spell frustrated????...Does anyone have any ideas?)

It's  Rachel Ray's recipe for leftover turkey tettrazini tonight...this is really delicious...

2 tablespoons extra virgin olive oil

 4 tablespoons butter

1 onion, finely chopped

2-3 cloves garlic chopped

Salt and pepper

4 tablespoons flour

1/2 cup dry white wine

1 1/2 cups turkey gravy or turkey stock

2 cups milk

A little freshly grated nutmeg

1 cup grated Parmigiano Regginano cheese

1 pound cooked leftover turkey chopped

1 1/2 cups cooked cauliflower or broccoli leftovers chopped

1/2 cup peas, defrosted or leftovers

homemade breadcrumbs, chopped toasted leftover stuffing or Panko mixed with melted butter and Parmigiano Regginano cheese

1 pound egg noodles or egg pasta cooked to al dente

Pre-heat the oven to 375ºF. Heat the olive oil in a skillet over medium to medium-high heat; add the butter and melt into the oilive oil. Add the onion and garlic and season with salt and pepper. Add the flour and stir for 1 minute. Whisk in the wine, then the gravy or stock and milk; adjust the salt and pepper and season with nutmeg, to taste. Let thicken enough to coat a spoon and stir in the parm Parmigiano Regginano cheese. Stir the turkey, cauliflower, peas, pasta into the sauce and turn everything into a casserole dish. Top with breadcrumbs and bake until heated through, about 30 minutes.

I used our Mother's dressing toasted for the topping... Don't skimp on the chopped cauliflower, it adds a sweet crunch tht is really delicious...and the peas add just the right amount of color...This recipe is a keeper!

Just about done with Christmas decorating at our house...

More on that next week...

Happy Thanksgiving!!!

The table's all set and I can hardly wait till tomorrow evening...The whole family will be here and we have two baby boys to love on this year...

I've set an extra table for two adults and two high chairs...

There's plenty of room in the kitchen but I like for everyone to be together...
