Sunday Supper … Mixed Spring Green Salad & Basmati Rice
I had a friend for dinner Saturday night…took pics of the food and table scape…I actually made this recipe up.
Talena and I love to eat at Laduni Latin Cafe at NorthPark when we are in Dallas. In December we had the most delicious rice and green salad for lunch. I mean I've been craving it every since we had it. I searched for the recipe and never found one so I just made this up. And it is soooo good.
Warm Basmati Rice and Mixed Spring Green Salad with Balsamic Vinaigrette - Serves 4
Balsamic vinaigrette recipe:
…(You can use a bottled dressing or your own favorite version…this is a simple recipe)
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tsp. honey
1 tsp. Dijon mustard
1 shallot, minced
1 clove garlic, minced
Salt and ground pepper to taste.
Combine all in a glass jar with lid and shake well till combined.
2 cups Basmati Rice
1 to 2 cooked chicken breasts
1/2 small white onion
Grated parmesan cheese
Salt and Pepper
Grill and shred chicken breast... or you could use a store bought roasted chicken. Set aside.
Finely dice 1/2 small onion and sauté in tbsp of olive oil till soft and translucent.
Prepare Basmati rice per the package directions. ( 2 cups will serve 4 people)
Chop a big handful of fresh Cilantro
Combine the warm prepared Basmati rice with about a 1/2 cup of balsamic vinaigrette , the sautéed onion , the shredded chicken, chopped cilantro, and 1/2 cup of shredded parmesan cheese. Salt and pepper to taste. Stir and portion onto plates.
Toss the mixed Spring greens with balsamic dressing …portion onto plates.
Slice 1/2 avocado per person and add to the plate.
Spring is definitely emerging so I had fun arranging some fresh potted plants for the table…
